Something Nigerian. Beef suya salad. We know this one is a meal and not exactly finger food. But we turned it into a proper meal that is healthy and tasty.
Granola + Yogurt Parfait containing the star fruit of the month of Ramadan - Dates!
Tortilla Chips with Piri-Piri Sauce which was used in marinating the chicken, only it was reduced on low heat for some minutes for a thicker consistency
Coconut and Panko Chicken bites
(Served with mini tortillas, baby leaf salad and ketchup)
Alhamdulillah, as Allah would have it I have reached the end of my food blogging. As we embark on the last 10 days of Ramadan, I ask that for Allah’s sake we make optimal use of it. Food is good but the reward of the Almighty is immeasurable.
Today’s iftaar is yam pottage (asaro, as the south western Nigerians call it). It is prepared like the plantain porridge except that here, it is made with Yam.
I had mine with seasoned/garnished spinach (efo riro). You could have this meal with anything!
I remember once having it with eggs. Although my stomach did not really agree with the meal, I enjoyed it while it lasted.
With food, its always good to try out new things, you never know which experiment would make your tummy happy. LOL.
